60 виноградных листьев, 2 яйца, 1 стакан риса, 4 луковицы, 1/2  пучка

зеленого лука, 1 пучок щавеля, 1/2 стакана рубленого укропа, 1/4 стакана

рубленых киндзы и мяты, 1/3 стакана топлено масла, 1/2 стакана кефира, 2

дольки чеснока, корица, перец черный молотый, соль.

Зелень укропа, киндзы и щавеля, лук зеленый перебрать, промыть, мелко

нарезать. Вкрутую сваренные яйца, мелко порубить, соединить  с  зеленью.

Посолить, поперчить, добавить мяту, корицу, отваренный рассыпчатый  рис,

топленое масло. Виноградные листья перебрать, промыть,  ошпарить  кипят-

ком; через 5 минут воду слить, листья выложить на разделочную доску.  На

каждый лист положить приготовленный из зелени и риса фарш, завернуть го-

лубцы. Сложить их плотно друг к другу слоями в сотейник с толстым  дном,

выложенным виноградными листьями. Влить овощной отвар на 1/2 высоты слоя

голубцов, посолить и проварить 10 – 15 минут;  положить  сверху  жареный

репчатый лук, накрыть крышкой и варить еще 5 минут. Подать долму по 10 -

15 штук на порцию, полить тертым чесноком, разведенным кефиром или  сме-

таной, посыпать мелко рубленой зеленью.
